How to enjoy it

  • Neat
  • With water

At 46% with plenty of sherry depth, it rewards slow sipping neat. A few drops of water lift the dried-fruit aromas even further.

Food pairing

Christmas pudding, fruitcake or dark chocolate. Also aged cheeses or cured ham.

Background & production

Made at Midleton Distillery in County Cork. It is a single pot still whiskey — the traditional Irish style made from a mash of malted and unmalted barley and distilled in copper pot stills.

Whiskey matured in bourbon and oloroso sherry casks is transferred to first-fill sherry butts seasoned with oloroso from Bodegas Lustau in Jerez, Spain, for one more year. Launched as a permanent expression in 2016, it was Redbreast's first sherry finish.

It carries no age statement and is bottled non-chill filtered at 46% ABV.
