How to enjoy it
- Neat
- On the rocks
With its clear sweetness and vanilla, it is best sipped neat or on the rocks. Ice tightens the sweetness and brings out the gentle spice.
Food pairing
Spiced curries or tandoori chicken make a natural match. Also good with caramelised nuts or vanilla ice cream.
Background & production
Made at Cuncolim in Goa, on India's west coast. John Distilleries, founded by Paul P. John in 1992, set up a traditional pot-still distillery in Goa to make quality single malt, releasing its first single malts in 2012.
It uses Indian six-row barley, grown in regions including the Himalayan foothills, and the tropical monsoon climate speeds up maturation.
Brilliance is the distillery's flagship: unpeated spirit aged 6–8 years in first-fill ex-bourbon casks, bottled non-chill-filtered at 46% ABV.
