Cascade Hollow Distillery (George Dickel)

USA / Tennessee

George Dickel's distillery in a hollow near Tullahoma, Tennessee, known for chilling its spirit before charcoal mellowing.

History & character

A distillery in Cascade Hollow near Tullahoma, Coffee County, Tennessee. Whiskey was being made in the hollow by the 1870s, and the brand later came to carry the name of German immigrant George A. Dickel.

After Prohibition ended production, Ralph Dupps of Schenley Industries rebuilt the distillery in 1958, about a mile from the original site, working from manuscripts in which Dickel recorded his methods. The first mash ran in 1959 and the modern brand was introduced in 1964. It is now owned by Diageo.

The mash bill is 84% corn, 8% rye and 8% malted barley, and the new spirit is chilled to about 4°C before charcoal mellowing. Nicole Austin has been general manager and distiller since 2018. It is the second-largest distillery in Tennessee after Jack Daniel's.
